Dole Whip Cupcakes
Ingredients:
· 24 white/yellow/vanilla cupcakes of your choice (I use Betty Crocker)
· ½ Cup Crisco
· 1 Stick softened butter
· 1 Can of pineapples
o From this you will use 3 Tablespoons +1 teaspoon of pineapple juice
· 4 ½ Cups powdered sugar
Supplies:
· Electric Mixer
· Bendy Straws
· Drink Umbrellas
· Decorator Bags
· Wilton Decorating Tip 1B
· Scissors
· Toothpicks
Directions:
1. Make your cupcakes following the instructions on the box. Let them cool completely
2. Cream the Crisco and butter with one teaspoon of pineapple juice with an electric mixer.
3. Mix the powdered sugar and three tablespoons of pineapple juice in. Add in additional powdered sugar as needed if the frosting is too thin. You want the frosting to be soft, but able to hold its shape.
4. Place the frosting in a decorating bag with Wilton Decorating Tip 1B. Create a large swirl of frosting on top of the cupcakes.
5. Place a piece of pineapple on top of each cupcake. The easiest way to do this is with a toothpick.
6. Cut the straws to an appropriate height for your cupcakes. I also cut a bit off the top of the straws to make them look proportional when I bent it.
7. Place a drink umbrella and straw in each cupcake.
8. Serve to your friends and family!
